To avoid nerves, don't put off packing until the last day, especially if you don't this too often. Over time, you will develop your own packaging system. To make sure we don't forget anything for the trip, it's a good idea to create our own “check list” that we'll tick off one by one, and update with the lessons we've learned when we return from the trip.
We pack differently for carry-on luggage and differently for checked baggage. Different to warm countries, different to cool destinations. Different for a hotel, different for a trip on your own, etc. No less, always keep in mind that there are stores everywhere and we don't have to always take everything. In addition, if our bag is stuffed on the way out, we are likely to have even more trouble packing on the way back.
